No-Bake Vegan Tropical Fruit Tart

‘To eat is a necessity… but ti eat intelligently, is an art’! And combine this art with the floor for mixing fun ingredients, the food pyramid becomes your canvas! Who said fruit tarts needed to be all butter and sugar and flour? We can go vegan, we can go fun and fruity and whip up a perfect dessert to pair with your evening wine and dine!

Ingredients:

  • For the base:
  • Walnuts:1 cup
  • Dates: ½ cup, de-seeded
  • Goji Berries: ¼ cup
  • Coconut Oil: 1 tablespoon

For the filling:

  • Cashews: 1½ cups, soaked for 3-4 hours or overnight
  • Coconut cream: 250 ml, blend the meat of baby young coconut
  • Frozen Mixed Tropical Fruits: 1 cup (freeze mini pineapple, mango, banana overnight)
  • Dragonfruit Pulp: Topping for a beautiful pink hue
  • Turmeric Powder: ¼ -½ tsp for natural yellow colour

Process:

  • To set the base, breakdown the walnuts in a food processor. Add coconut oil, dates and goji berries and process again until fine and sticky.
  • Press down evenly on a tart tin greased with coconut oil and set aside.
  • For the filler, add all the frozen ingredients in a high speed blender and blend to a smooth, creamy consistency.
  • Pour the filling on to the base and spread to the sides evenly and press it down gently.
  • Place in the freezer to set
  • Pipe some dragonfruit puree along with edible flowers, sweet basil leaves and nuts on the tart and set again for 3-4 hours or overnight.
  • Your perfect summer evening dessert is ready to be served!
